GREEN SALAD SANDWICHES 
1 c. chopped celery
2 cucumbers, diced
1 onion, chopped
2 sm. carrots, grated
1/2 bell pepper, grated
2 c. mayonnaise
Salt & pepper to taste
1 1/2 env. of unflavored gelatin, softened in 1/3 c. cold water

Melt the softened gelatin in a double boiler on stove top, stir constantly. Add this mixture to the other items and mix well. Makes 20 to 24 sandwiches. This mixture stores well for about 7 days. It is also great for crackers.
