LOW-FAT SEAFOOD GUMBO 
2 qts. water
1 lb. shrimp (peeled and deveined)
1 lb. sm. raw oysters
1 lb. crab meat (claw)
1 1/2 c. green onions (and tops), chopped
1 c. med. bell pepper, chopped
1 c. celery, chopped
1/2 c. Oil-Free Roux
2 tsp. sodium free creole seasoning
1 tsp. red pepper
6 c. cooked rice

Measure 1 1/2 quarts of water in a 6 quart pan. Bring to boil. Gradually add 2 cups cold water to oil-free roux, mixing well to make a smooth paste. Slowly stir in roux mixture to 1 1/2 quarts of boiling water. Add red pepper, parsley flakes and sodium free creole seasoning to water. Add bell pepper, celery and green onion. Let mixture simmer for 45 minutes. Add shrimp, crab claw meat and oysters and let simmer for 30 minutes. Serve over 1/2 cup cooked rice.
