ESCALOPES DE VEAU 
2 lbs. veal, cut in thin slices
1/2 c. chopped onions
1 tbsp. butter
1/2 tsp. salt
1/4 tsp. pepper
1/4 c. consomme
1/2 c. dry white wine
1/4 c. bread crumbs
3 tbsp. melted butter
1/2 c. grated Swiss cheese (1/2 lb.)

Saute onion in butter until golden. Place in casserole, add veal slices, salt, pepper, consomme and wine. Combine crumbs with melted butter and cheese and top casserole with this mixture. Bake, uncovered in a preheated 350 degree oven for 1 hour. Makes 4 servings.
