CODFISH AU GRATIN 
4 tbsp. butter
2 tbsp. flour
1 tsp. salt
1/2 tsp. pepper
1 c. grated cheese
2 c. milk
2 1/2 c. fresh cod, cooked, flaked, cooled

Melt butter; add flour, salt and pepper. Stir to make paste. Add milk and cook until it thickens, stirring constantly. Grease a 2- quart casserole. Pour a little of the sauce over the bottom.

Add a layer of codfish; sprinkle with cheese. Repeat these layers until all ingredients are used, ending with a layer of cheese. Bake in moderate oven (350 degrees) until brown, about 30 minutes.
