MAMA'S VEGETABLE SOUP 
3 (28 oz) cans diced tomatoes
3 quarts water or more if needed
1 ham bone (or other meat may be substituted)
6 oz (1/2 jar) chili sauce
1 (16 oz) bag frozen sliced okra
1 (14 oz) can french style green beans, with liquid
2 (14 oz) can whole kernel corn, with liquid
2/3 cups uncooked rice
2 to 3 stalks celery, sliced
2 to 3 carrots, sliced
4 cups chopped cabbage
2 tbsp olive or safflower oil
salt and pepper to taste
bacon drippings to taste (optional)

This makes a large pot of soup!

Pour tomatoes, water and chili sauce in large stockpot. Add ham bone and cook until meat comes off bone easily. Remove ham bone and cool, then remove all lean meat from bone and return meat to pot. Add frozen okra (remove stem pieces first), rice and chopped cabbage. Cook celery and carrots in water to cover in microwave 6 to 8 minutes, then add to pot (including water). Add oil and continue to cook until rice and cabbage are done. Stir frequently to keep from sticking. Add green beans and corn (with liquid), salt and pepper. Add additional water, tomato, or V8 juice along as needed for desired consistency. Leftovers freeze well.

Since microwave ovens vary in power, you may need to adjust your cooking time.
