POTATO DOUGHNUTS | |
2 eggs 1 c. sugar 2 tbsp. melted butter 1 c. mashed potatoes 1 c. buttermilk 4 1/2 c. sifted flour 4 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. nutmeg Oil for deep frying Beat eggs with sugar. Stir in butter, potatoes, and buttermilk. Sift flour with baking soda, salt and spices. Add to egg mixture and blend. Chill dough for 2 hours. Roll out to 1/2 inch thickness. Cut out with doughnut cutter or glass and thimble. Fry in deep, hot (365 degree) oil for a few minutes on each side until light brown. Drain on paper towels. Dust with sugar, sugar and cinnamon, or frost as desired. Makes 4 dozen. |
