TURKEY AND NOODLE CASSEROLE 
1 lb. ground turkey
1/2 c. sliced onion
1 c. diced zucchini (optional)
2 c. chicken stock (can use canned chicken broth)
1/2 tsp. poultry seasoning
1 tsp. minced garlic
1/2 c. diced green pepper
1 c. canned tomatoes (whole, peeled), chopped
4 oz. uncooked noodles (approx. 1 1/3 c.)
Salt and pepper to taste

In large skillet use 2 teaspoons of cooking oil (or you may use a non-stick skillet coated with non-stick spray), saute turkey, garlic, onion and green pepper until turkey is no longer pink. Add zucchini (optional) and saute 2 minutes. Add tomatoes, stock, noodles and poultry seasoning. Cover and simmer 10 to 15 minutes, or until noodles are cooked. Season to taste with salt and pepper.
