MINESTRONE, GENOVESE STYLE 
1 c. dried white beans
3 1/2 c. chicken flavored broth
2 tsp. salt
1 sm. head green cabbage, quartered and then sliced
4 carrots, diagonally cut into 1/4 inch slices
2 med. potatoes, peeled and cubed
16 oz. canned Italian style tomatoes
2 med. onions, sliced
1 rib celery, diagonally sliced into 1/2 inch slices
2 zucchini, sliced 1/2 inch round
1 lg. fresh tomato, cubed into 1/2 inch pieces
1/4 c. parsley
1 c. spaghetti, uncooked
1 clove garlic, pressed

Soak beans overnight. Drain. Cook in chicken-flavored broth. Saute onion in olive oil. Add other vegetables to onion and cook slowly, uncovered, stirring occasionally (about 20 minutes). Add to cooked beans. Add parsley and garlic and spaghetti. Cover and simmer 30 minutes. Stir occasionally. Serve hot.
