GERMAN APPLE PANCAKES 
5 tbsp. butter and cooking oil mixed
7 cooking apples, peeled, cored and cut into small chunks
Juice of 1 lemon
12 eggs (or egg substitute)
2 c milk
2 c. flour
1 tsp. salt
Sugar and cinnamon
1/2 c. sugar

Preheat oven to 450 degrees. Saute apple chunks in melted butter/oil until barely softened. Sprinkle with 2 tablespoon lemon juice, 1/2 cup sugar and lots of cinnamon. Transfer apple chunks to a large oven proof pan (or two 12 inch quiche pans) coated with Pam (or equivalent). Combine flour, eggs, milk and salt. Pour over apple chunks in pan(s). Bake at 450 degrees for exactly 20 minutes. Lower oven heat to 350 degrees and bake for exactly 10 minutes more. Sprinkle with remaining lemon juice, a little sugar and cinnamon.

Serve immediately because, like a souffle, it falls quickly. Nicely serves 5 to 6 people for brunch or light supper. Serve with bacon, ham or small sausages and fresh fruit. Enjoy!
