POULTRY SAUSAGE 
3 tbsp. butter
1 lb. ground turkey
1 c. fresh bread crumbs
1 tbsp. poultry seasoning
2 tsp. ground sage
1 tsp. basil leaves
1/2 tsp. fennel seed
1/4 tsp. ground black pepper
1/4 c. egg substitute

Melt 2 tablespoons butter; combine with turkey and bread crumbs; set aside.

Crush spices together and mix with egg substitute; combine with turkey mixture. Shape into eight 3 inch round patties using about 2 tablespoonfuls of mixture for each patty.

Melt remaining butter in a large skillet over medium heat. Cook patties 3 to 5 minutes on each side until lightly browned and cooked through. Serve hot.

MICROWAVE: Prepare patties as above. Omit remaining tablespoon butter. Place 4 patties in 9 inch microwave-proof pie plate. Microwave on HIGH (100% power) for 3 to 5 minutes, rotating 1/2 turn after 1 1/2 minutes. Repeat with remaining patties.

Since microwave ovens vary in power, you may need to adjust your cooking time.
