POULTRY STUFFING 
1 1/4 c. butter
1/4 c. diced celery
1/2 c. minced parsley
3/4 c. minced onion
1/3 tsp. pepper
4 1/2 qts. bread
2 1/4 tsp. salt
1 1/2 tsp. poultry seasoning

Melt butter in deep kettle. Add onions, simmer until tender. Combine all other ingredients and add to onion and butter. Heat without burning, stir frequently. Cool. Stuff.
