CREAMY POTATO BAKE 
Prepare instant mashed potatoes (enough for 6 servings) according to package directions. Omit butter. Instead add 1 (4 ounce) carton whipped cream cheese (or 4 ounce Philadelphia cream cheese). Beat well. Stir in one beaten egg, 2 tablespoons finely chopped green onions and 1 tablespoon finely snipped parsley. Transfer to greased baking dish. Dot with 1 tablespoon butter, or grated cheddar cheese, or nothing.

Bake in 400 degree oven for 30 minutes. 6 servings.
