CREAM OF BROCCOLI SOUP 
1 bunch broccoli, stems included
1 lg. onion
2 stalks celery
3 tbsp. butter
2 tbsp. flour
2 c. chicken broth (homemade, canned or bouillon cubes)
Salt and pepper
1/3 c. cream or milk (I use evaporated)
Parsley (chopped)

Slice broccoli, onion and celery. Saute 10 minutes in butter. Sprinkle flour over vegetables and cook another 3 minutes. Add broth, simmer about 25 minutes. Blend in food processor. Return to clean pot. Add cream, or milk, salt and pepper. Sprinkle chopped parsley on top.
