ITALIAN CHICKEN & VEGGIES 
2 or 3 chickens, cut into serving size
Potatoes, peeled & cut into quarters
1 lb. mushrooms, washed & cut in half
1/2 c. olive oil
2 cloves garlic, cut up
1 tbsp. rosemary
1 c. canned or fresh tomatoes
2 tsp. fresh & diced parsley
Salt & pepper

Put chicken, potatoes and mushrooms in large baking dish. Stir together all other ingredients and add to pan. Bake at 375 degrees for 1 hour to 1 1/2 hours. Stir every once in a while.
