MATTIE'S MINI CHEESECAKES 
12 vanilla wafers
2 (8 oz.) pkgs. cream cheese
1/2 c. sugar
1 tsp. vanilla
2 eggs

Preheat oven to 325 degrees. Line muffin tin with foil liners. Place one wafer in each liner. Combine cream cheese, vanilla and sugar. With electric mixer on medium speed, blend well. Add eggs, mix until well blended. Pour filling over wafers, 3/4 full. Bake 25 minutes. Remove from muffin tin when cool. Chill. Top with fruit, chocolate, etc.
