SQUASH BOATS 
4 med. lg. yellow squash
1/2 lg. green pepper, chopped
2 tomatoes, diced
1 med. onion, diced
1/2 lb. cooked, chopped meat (ham, turkey, sausage, etc.)
1/4 lb. grated cheese
Salt and pepper to taste
Bread crumbs and butter

Cook squash until just tender (5 minutes). Half squash lengthwise and scoop out pulp. Mix with all ingredients except bread and butter. Refill squash cavities. Top with bread crumbs and butter. Bake at 400 degrees for 20 minutes.

What they mean by "cooking the squash" is this: first, cut lengthwise, then scoop out squash meat with a sharp spoon. Chop into smaller pieces and steam or boil in just a little water. There isn't really any way to get a whole squash "cooked" in 5 minutes.

Make sure you drain the mixture well before adding cheese and filling boats.
