SQUASH BOATS | |
4 med. lg. yellow squash 1/2 lg. green pepper, chopped 2 tomatoes, diced 1 med. onion, diced 1/2 lb. cooked, chopped meat (ham, turkey, sausage, etc.) 1/4 lb. grated cheese Salt and pepper to taste Bread crumbs and butter Cook squash until just tender (5 minutes). Half squash lengthwise and scoop out pulp. Mix with all ingredients except bread and butter. Refill squash cavities. Top with bread crumbs and butter. Bake at 400 degrees for 20 minutes. |
