CREAM OF BROCCOLI SOUP 
1 lb. broccoli
1 1/2 c. boiling water
1/2 tsp. salt
1 tbsp. finely chopped onion
1 chicken bouillon cube
2 1/2 c. milk
3 tbsp. soft butter
3 tbsp. flour
Salt
Pepper

Discard tough portions of broccoli and cut into small pieces. Place in saucepan with boiling water, salt and onion. Cook until broccoli is tender, then add bouillon cube. Stir in milk and bring to a boil. Cream together soft butter and flour. Stir butter mixture into soup, stirring until soup thickens, season with salt and pepper. If soup becomes too thick, thin with milk or cream. Makes 6 servings.
