CHOCOLATE CHEESECAKE 
1 tbsp. butter
3 oz. unsweetened chocolate
9 oz. semi-sweet chocolate
4 (8 oz.) pkgs. cream cheese, softened
2 tbsp. vanilla
1 c. whipping cream
6 eggs
1/2 to 1 c. sugar
Chocolate Cookie Crust

Melt butter over hot water in double boiler. Add chocolate and melt over low heat. Beat cheese until creamy. Add vanilla and whipping cream. Stir in chocolate mixture. Beat eggs with sugar and slowly beat into chocolate mixture. Turn into chocolate cookie crust and bake at 350 degrees 45-60 minutes or until cake puffs slightly in center. Cool and chill thoroughly before unmolding. Serve with whipped cream, if desired.

CRUST:

1 (1 lb.) pkg. chocolate sandwich cookies
3 tbsp. melted butter

Process cookies until fine in food processor. Add melted butter and combine to moisten crumbs. Press onto bottom and sides of 9 inch springform pan and freeze until ready to fill.
