TASTY TUNA LOAF | |
2 c. tuna, drained 1/4 c. dry eggs 3/4 c. evaporated milk 1 tbsp. chopped onion 1 tbsp. lemon juice Pepper to taste 1/2 c. crushed cereal Add milk to egg gradually and mix well. Add cereal crumbs and soak for 5 minutes to soften cereal. Drain tuna and mix with milk mixture. Add lemon juice, onion, and pepper. Blend well. Bake in greased loaf pan at 350 degrees for 40 minutes, until firm in center. Serves 6. VARIATION: Use 1 tall cup of salmon instead of tuna. Take off the salmon skin but mash bones in with the meat to add calcium. |
