GERMAN LEEK SALAD 
8 leeks
1/2 c. sour cream
2 tbsp. lemon juice
1 tsp. (or more) horseradish
Salt and pepper

Cook leeks until tender; drain. Chill. Mix the remaining ingredients and pour over the leeks. Serves 4 as a side dish.
