GRITS AND CHEESE CASSEROLE 
4 c. water
1 c. grits (quick grits)
1 stick butter
8 oz. Velveeta cheese
2 eggs
Milk

Cook grits as you normally would. Remove from heat and stir in butter and cheese (broken into pieces for easier melting) until melted. Let cool. In a 1-cup measuring cup, beat eggs and add milk to make a full cup.

Beat eggs and milk until foamy; stir into cooled grits. (Grits do not have to be cold, but cool enough not to curdle milk-egg mixture.) Pour into a buttered casserole dish. Bake at 350 degrees for 45 minutes or until set (when knife comes out clean). You can put finely crumbled corn flakes on top before baking if you like.
