APPLE POUND CAKE 
1 1/2 c. corn oil or salad oil
2 c. sugar
3 eggs
2 tsp. vanilla extract
3 c. all-purpose flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon and 1/2 tsp. nutmeg
2 c. finely chopped, peeled apples
1 c. chopped nuts
1/2 c. golden raisins (optional)

Beat eggs, sugar, oil, and vanilla until well blended. Combine dry ingredients and add to sugar mixture. Stir in apple, nuts, and raisins.

Spoon batter into greased and floured 10-inch tube pan. Bake at 325 degrees for 1 hour and 15 minutes. Cool 10 minutes.

APPLE CIDER GLAZE:

1/2 c. brown sugar
1 c. apple juice
2 tbsp. butter

Cook in saucepan until sugar is dissolved. Pour over cake.
