FRESH APPLE CAKE 
4 lg. apples
2 c. sugar
2 eggs
1 c. Wesson oil
2 tsp. baking soda (Arm & Hammer)
1 tsp. salt
3 c. sifted plain flour
1/2 tsp. cinnamon
1/2 tsp. vanilla
1/2 c. nuts, chopped

Peel and chop apples in small pieces. Mix sugar and apples, let stand 10 minutes. Beat eggs, add oil and mix well. Mix dry ingredients together. Add finely chopped nuts. Fold apples and sugar mix alternately with dry ingredients into egg mixture. Cook in well greased and floured tube pan 1 hour and 25 minutes at 325 degrees.
