PUMPKIN JELLY ROLL 
1 (8 oz.) cream cheese, room temperature
1 c. powdered sugar
4 tbsp. butter
1 tsp. vanilla
1 tbsp. milk

JELLY ROLL MIX:

2/3 c. pumpkin
3/4 c. flour
1 tsp. baking soda
1/2 tsp. salt
3 slightly beaten eggs
1 c. sugar
1 tsp. cinnamon

Beat together and let stand the first 5 ingredients. Turn oven on. Mix together the next 4 ingredients. Add the last 3 ingredients. Then pour into jelly roll pan that has been greased and covered with wax paper. Bake at 375 degrees for 15 minutes and let cool 5 minutes. Turn onto towel. Peel off wax paper. Roll with towel into jelly roll. Leave rolled 20 minutes. Gently unroll, spread on cheese mixture and re-roll.
