OLD FASHIONED COCONUT CAKE 
2 1/2 c. flour
3 tsp. baking powder
1 tsp. salt
1 1/4 c. sugar
2/3 c. shortening or butter
1 c. milk
1 1/2 tsp. vanilla
5 egg whites beaten to meringue with 1/2 c. sugar
1 c. Baker's shredded coconut

Mix by hand or on low speed by electric mixer. Stir shortening just to soften. Sift in dry ingredients. Add milk and mix until all flour is dampened then beat 2 minutes. Add meringue mixture and beat 1 minute longer.

Bake at 350 degrees for about 35 minutes in two 9 inch pans or in a long pan. Without or with icing.
