OVEN FRIED CHICKEN 
1 c. instant potato flakes
1 tsp. salt
1/4 tsp. pepper
1/4 tsp. rosemary, crushed
1/4 to 1/2 tsp. poultry seasoning
1 egg, slightly beaten
1 tsp. lemon juice
2 1/2 to 3 lbs. frying chicken, cut up

Heat oven to 375 degrees. In plastic bag, combine potato flakes and seasonings. In shallow bowl, combine egg and lemon juice. Dip chicken pieces in egg mixture; shake in plastic bag. Place chicken skin side up in ungreased 15 x 10 inch jelly roll pan. Bake uncovered at 375 degrees for 60-75 minutes or until chicken is tender. 6 servings.
