OVEN-FRIED CHICKEN 
2 lb. chicken breast
2 tbsp. plus 2 tsp. butter, melted
2 tsp. lemon juice
1/8 tsp. garlic powder
1/4 tsp. salt
1/8 tsp. pepper
1/4 c. plus 2 tbsp. crushed corn flakes

Preheat oven to 350 degrees. Rinse chicken and pat dry. In a small bowl, combine melted butter and lemon juice. In a shallow bowl, combine garlic powder, salt, pepper, and crushed corn flakes; mix well.

Dip each piece of chicken first in butter and then in crumbs. Turn to coat evenly. Place chicken on a baking sheet that has been sprayed with a non-stick cooking spray. Drizzle with any remaining butter. Bake 1 hour until brown.
