ZUCCHINI SPICE CAKE 
2 1/2 c. whole wheat flour
1/2 tsp. salt
1 tsp. cinnamon
2 1/2 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. ground cloves
1 tsp. nutmeg
2 c. honey
2 tsp. vanilla
2 c. zucchini, grated
3 eggs, beaten
1/4 c. milk
3/4 c. butter

Stir together dry ingredients in large bowl. Mix together honey, vanilla, zucchini, beaten eggs, milk and butter. Beat for 3 minutes. Add to dry ingredients in bowl, stirring until completely mixed. Bake at 350 degrees in two 9 inch cake pans for 35 minutes or in one 9x12 inch cake pan for 45 minutes.
