CELERY RICE SOUP 
1 1/2 c. chopped celery and leaves
1/4 c. rice
1 sm. onion, chopped
1 1/2 tsp. salt
Dash of pepper
1 1/2 c. milk
1 tbsp. butter

Combine celery, rice, onion, salt and pepper and 3 1/2 cups water in saucepan; bring to a boil. Reduce heat; simmer for 20 minutes or until rice is tender. Add milk and butter; heat until butter is melted. Serve immediately.
