2 lb. pork, cut into 1 inch cubed pieces 1 clove garlic, crushed 4 tsp. salt or soy sauce to taste 1 tsp. black ground pepper 1 tbsp. lard 2 c. water 1/2 c. vinegar Place pork in a saucepan. Add vinegar, garlic, pepper, salt or soy sauce and water. Cover the saucepan and cook slowly until meat is tender and most of the liquid has evaporated leaving only about 1/4 cup of broth. Drain, separate pieces of garlic from the pork and fry in lard until brown. Add the broth and simmer for about 5 minutes. Serve hot. |
