MUSTARD POTATOES 
2 cloves garlic, crushed
2 tbsp. butter
2 tbsp. olive oil
3 red potatoes, unpeeled and thinly sliced
1 yellow onion, sliced thinly
Salt
Fresh ground pepper
Paprika
2 tbsp. Dijon mustard

Saute garlic in butter until soft. Add potatoes and saute until brown on both sides, one layer at a time. When done, transfer to plate, keep warm. Add remaining onion and saute until soft. Pour off oil and return potatoes to pan with onion. Season to taste with salt, pepper and paprika. Add mustard and toss carefully to coat all the potatoes. Serve immediately. Serves 4.
