APPLE (OR PEAR) PIE IN A JAR 
4-1/2 c. sugar
2 tsp. cinnamon
1 tsp. salt
1 c. cornstarch
1/2 tsp. nutmeg
10 c. water
3 tbsp. lemon juice
7 qt. peeled and sliced apples or pears

Combine first 6 ingredients in large saucepan, heat until bubbly. Add lemon juice. Place fruit in quart jars, leaving 1-1/2 inch head space at top. Pour the hot syrup over fruit, seal. Process in hot water bath for 25 minutes, or pressure cooker for 10 minutes at 10 pounds of pressure.

To make pie, place 1 quart of mixture in pie shell. Dot with butter, cover with a top crust.

Bake at 400°F°F 40 to 50 minutes. Also makes an easy cobbler.
