SOUR CREAM PEAR PIE 
2 c. diced peeled ripe pears
1/2 c. sugar
1 egg, beaten
1 tbsp. flour
1 c. (8 oz.) sour cream
1 tsp. vanilla
dash of salt
1 unbaked pastry shell (8-inch)

Topping:

1/2 c. sugar
1/3 c. flour
1/4 c. butter

Combine pears, sugar, egg, flour, sour cream, vanilla and salt. Blend gently. Spoon into pie shell.

Bake at 350°F for 25 minutes. Combine topping ingredients. Sprinkle over pie. Return to the oven for 30 minutes. Chill before serving. Store in refrigerator.

Yield: 8 servings.
