EASY RED BEANS & RICE 
1 lb. smoked link sausage, cut into 1/2 inch slices (we like spicy)
1 med. onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2 (15 oz.) cans kidney beans, drained
1 (16 oz.) can tomatoes, undrained & chopped
1/2 tsp. dried whole oregano
1/2 tsp. pepper
Hot cooked rice

Cook sausage over low heat 5 to 8 minutes. Add onion, green pepper and garlic; saute until tender. Drain. Add beans, tomatoes and seasonings; simmer, uncovered for 20 minutes. Serve over rice. 4 to 6 servings.

TIP: I've used extra hot sausage and left out the seasonings and this was still wonderful!
