RED BEANS AND RICE 
1 lb. smoked sausage, cut in 1/2 inch slices
1 med. onion, chopped
1 green pepper, chopped
1 clove garlic, minced
2 (15 oz.) cans kidney beans, drained
1 (16 oz.) can tomatoes, chopped
1/2 tsp. dried oregano
Dash pepper
Dash hot sauce, optional
Hot cooked rice

Cook sausage over low heat 5 minutes. Add onions and green peppers and garlic and cook until tender. Add beans and tomatoes and seasonings; simmer 20 minutes.

Meanwhile, cook rice and place in 2 quart casserole, pour bean mixture over rice and bake until hot, about 30 minutes.
