GINGER CAKES (U.S.A.) 
3/4 c. butter
1 c. brown sugar (firmly packed)
1 egg
1/4 c. molasses
2 c. plus 1 tbsp. flour
2 tsp. baking soda
1/4 tsp. salt
1 tsp. ginger
1 tsp. cinnamon

Preheat oven to 350 degrees. Measure 1 cup of brown sugar (pack it tightly into cup). Put butter and brown sugar into bowl. Stir them together until mixture is creamy. Add egg and molasses. Mix well. Add flour, baking soda, salt, ginger and cinnamon. Mix until batter is consistent. Grease cookie sheet lightly. Drop rounded teaspoons of batter onto cookie sheet or make into small balls by hand. Don't let them touch, the batter spreads in oven. Bake for 8 to 10 minutes.
