BAKED EGGS 
Grease a small pan, 8"x8" glass Pyrex works great. Take 3 slices of a diet bread of your choice. Cut in fourths. Spread out in bottom of pan, add a layer of light cheese, any flavor, cover the bread completely. Beat 6 eggs and 1 1/2 cups skim milk and 1/2 teaspoon vegetable oil. Cover and refrigerate overnight. In the morning, bake at 350 degrees until knife comes out clean.
