ZUCCHINI ROLLS 
4 zucchini
2 eggs, beaten
1/2 c. milk
2 tbsp. flour
3 tbsp. olive oil

MARINADE:

1/2 c. olive oil
Salt & pepper
2 tbsp. lemon juice

Slice zucchini the long way, very thin (1/8" thick). Prepare batter of eggs, milk and flour. Dip the slices and fry in a bit of olive oil over medium high heat. Brown lightly on both sides. Remove and place on paper towels to drain and cool. When cool, roll each up like a jelly roll. If the rolls are too wide slice into 2. Place on a serving plate. Mix the marinade and drizzle some on each.
