PEACH PRESERVES 
9 c. peaches
3/4 c. water
9 c. sugar

Cook peaches in water until barely tender on low heat. Drain off juice and add sugar and boil until syrup forms a thin thread. Add peaches and cook rapidly 10 minutes. Remove from heat and skim top. Let stand 24 hours. Put in jars. Process in boiling water 10 minutes.
