TUNA RICE CASSEROLE 
1 cup cooked rice
1 small can Tuna or Salmon
1 tbsp. lemon juice
1 tbsp. melted butter
2 eggs, whites and yolks beaten separately
1/2 cup buttered crumbs

Add to the cooked rice the fish, lemon juice, butter, and egg yolks which have been mixed together. Season to taste with salt and pepper, then fold in the egg whites which have been beaten stiff but not dry. Put into a buttered casserole dish, and cover the top with buttered crumbs.

Bake at 250°F for 20-30 minutes. Serve at once.
