STRAWBERRY MUFFINS 
1 pt. strawberries (2 c. diced)
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
1 c. + 2 tbsp. sugar
2 eggs
1/4 c. milk
1 tsp. vanilla
1 tbsp. chopped nuts

Cut strawberries into approximately 1/4 inch pieces. Sift flour, baking powder and salt. Cream butter and 1 cup sugar until light and fluffy; beat in eggs. Gradually beat in dry ingredients alternately with milk and vanilla. Toss berries with 1 tablespoon sugar and fold into batter. Fill well greased muffin tins 2/3 full. Combine remaining sugar and nuts. Sprinkle over the top of each muffin. Bake at 375 degrees for 25 minutes. Cool in pan for at least 15 minutes. Makes 12 large muffins; more smaller ones. May use blueberries or any desired berry.
