STRAWBERRY MUFFINS 
1 pt. strawberries (2 c.)
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. butter
1 c. plus 2 tbsp. sugar
2 eggs
1/4 c. milk
1 tsp. vanilla
1 tbsp. finely chopped walnuts

Cut berries into approximately 1/4 inch slices. Sift together flour, baking powder and salt. Cream together the butter and 1 cup sugar until light and fluffy. Beat in eggs. Gradually beat in dry ingredients, alternately with milk and vanilla.

Toss strawberries with 1 tbsp. sugar and fold into batter. Fill large size well greased muffin cups 2/3 full or use cupcake liners. Combine remaining sugar with nuts and sprinkle over each muffin. Bake 375 for 25 minutes. Cool in pan for 15 minutes. Makes about 12 large ones.
