MUSHROOM CHEESE QUICHE 
1 pie crust (homemade or frozen) prebaked
8 oz. Swiss cheese, shredded
1 c. fried bacon, crumbled
1 bunch green onions, chopped
1 lb. fresh mushrooms, sliced & sauteed previously in butter
Pepper & salt to taste
4 eggs
1/2 c. whipping cream
Dash Tabasco sauce

Put 1/2 of cheese on bottom of prebaked pie crust. Add mushrooms, sprinkle salt and pepper on top. Add half of the bacon, all of the onions the rest of the cheese and remaining bacon.

Beat eggs and add whipping cream. Put a dash of Tabasco sauce in this mixture and pour over pie. Bake for 45 minutes at 350 degrees. Let set and cool slightly.
