SWISS CHEESE AND MUSHROOM QUICHE 
1 1/2-2 c. grated Swiss cheese
1 med. onion
1/4 lb. mushrooms
Butter
Salt - pepper
thyme
4 eggs
1-1 1/2 c. milk
3 tbsp. flour
1/4 tsp. salt
1/4 tsp. mustard (dry)

Cover the bottom of your favorite pie crust with 1 1/2 cups grated cheese. Cover cheese with onion and mushrooms after they have been sauteed in butter with salt, pepper, and a dash of thyme. Make a custard from the rest of the ingredients, beat well. Pour custard over mushroom layer. Sprinkle with paprika. Bake at 375 degrees for 40 to 45 minutes or solid in the center. Variations: Cheddar cheese, broccoli, crab, asparagus, olives.
