RAISIN BRAN MUFFINS 
1 1/4 c. flour
3 tsp. baking powder
1/2 tsp. salt
1/2 c. sugar
3 c. raisin bran cereal
1 1/4 c. milk
1 egg
1/3 c. vegetable oil

Stir together flour, baking powder, salt, and sugar; set aside. Pour raisin bran and milk into large mixing bowl. Stir to combine and let stand 2 minutes until cereal is softened. Add egg and oil. Beat well.

Add dry ingredients to cereal mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2-inch muffin-pan cups.

Bake at 400 degrees about 25 minutes or until muffins are golden brown. Serve warm. Yield: 12 muffins.
