PRUNE CAKE WITH BUTTERSCOTCH GLAZE | |
2 c. sifted flour 1 tsp. baking soda 1/4 tsp. salt 1 tbsp. cinnamon 1 tbsp. nutmeg 1 tbsp. allspice 1 c. corn oil 1 1/2 c. sugar 3 eggs 1 tsp. vanilla 1 c. buttermilk 1 1/2 c. coarsely cut cooked, drained pitted prunes 1 c. chopped walnuts On waxed paper sift together flour, baking soda, salt, cinnamon, nutmeg and allspice; set aside. In a large mixing bowl beat together the corn oil and sugar; add eggs, one at a time beating well after each addition; stir in vanilla. |
