ZUCCHINI WITH BUTTER AND TOMATO
PROVENCAL
 
3 med. zucchini
6 med. tomatoes
2 tbsp. butter
Salt to taste
Pepper to taste
3 tbsp. olive oil
1/4 c. Parmesan cheese
1 clove garlic, minced

Slice zucchini and saute in butter and season with salt and pepper. Cut top and bottom off of tomatoes. Place on a baking sheet pan and remove a small amount of the center of the tomatoes.

Mix together salt, pepper, olive oil, Parmesan cheese and garlic and divide mixture evenly between the tomatoes, placing it on top of the tomatoes. Bake in an oven at 300 degrees F for 15 minutes. Serve along side zucchini on same plate. Serves: 6.
