ANTI PASTA SALAD 
1 head cauliflower (broken into small pieces)
1 bunch broccoli (bite size pieces, I use stalks, but peel before slicing)
1 box fresh mushrooms, sliced
2 cans water chestnuts, sliced
1 can pitted ripe olives, sliced
1 jar pimento olives, sliced
1 red onion, sliced thin
1 white onion, sliced thin
1 basket cherry tomatoes
2 pkgs. Italian Good Seasons Dressing, mixed as directed on pkg. (sometimes I add extra vinegar)
Italian seasonings to taste
2 cloves garlic, minced

Mix all except tomatoes. Let marinate overnight and add tomatoes before serving. Every so often when going to refrigerator turn container over, so all gets marinated. This keeps several days in the refrigerator and a good vegetable filler.

I have added slivered carrots and zucchini also to this vegetable medley and pepperoni.
