STUFFED ZUCCHINI 
8 med. zucchini
1/2 lb. chopped ground beef
1 egg
2 tbsp. Parmesan cheese
1/2 tsp. salt
1/2 tsp. pepper
6 slices prosciutto or another ham
3 tbsp. olive oil
1 tbsp. chopped parsley
1 slice lean bacon, chopped
2 tbsp. chopped onion
8 oz. tomato juice
3/4 c. water

Boil whole zucchini 8 minutes. Slice in half lengthwise, scoop out pulp and save. Dice zucchini pulp and mix it with chopped beef, egg, Parmesan, prosciutto, salt and pepper. Stuff zucchini with mixture.

Heat olive oil in large pan. Add parsley, bacon, onion and heat until well browned. Stir in tomato juice and water. Cook for 5 minutes. Place zucchini in a baking pan just large enough to fit squash. Pour sauce over and bake 30 minutes in a preheated 375 degree oven.
