RHUBARB PIE 
I have found the ready-made Pillsbury Pie Crusts to be excellent and so handy to have in the refrigerator.

FILLING FOR RHUBARB PIE:

4 c. diced rhubarb
2 tbsp. quick tapioca
1 tbsp. melted butter
1 1/4 c. sugar

Mix and let stand 15 minutes. Bake in hot oven.
